SIAL Paris 2018 will recreate a history of food innovation
Keeping one step ahead with food innovation is one of the goals assumed this year by Sial Paris 2018. Future Lab will recreate a history of food and it will also represent a forecasting space in this field.
"There truly is only SIAL Paris that is capable of this! Admittedly, I'm in the position of both judge and jury, and therefore perhaps not best placed to comment objectively", acknowledges Nicolas Trentesaux, SIAL Network Director. "Yet there is a reality that
emerges from our 54 years of history and all the experiences and success stories testified to by our partners, exhibitors and visitors: the biggest food laboratory happens here, in Paris!".
The laboratory will be buzzing, as a new nerve centre of the event, thanks to a new concept that brings together researchers, startups and new technologies used in the food industry, such a VR.
The food laboratory will offer possible answers to questions about alternative proteins needed for feeding the world's 8.6 billion population in 2030. Clean meat and other products will be presented in this space, along with themes such as digitally- assisted "homemade", and how artificial intelligence will revolutionise our food practices, no matter what the technology or scenario that ends up on top.
The show will be completed by SIAL Rising Startup, a home for 50 budding European businesses, and SIAL VR Lab, a spectacle that offers a virtual reality voyage through the food sector, for understanding how this technology will revolutionise our daily diet: in the restaurant, at work, or quite simply in the home.
"We wanted to go further than the SIAL Innovation competition, and understand the history, even the prehistory, of Food innovation", added Nicolas Trentesaux. This year, the Parisian trade fair will be organized between 21-25 October.
